In 2022 we opened Watch Hill Proper and filled it with more than 2,300 unique American whiskeys. Tasting that much changes what you think is worth bottling. In 2024 we started releasing our own.
Watch Hill Whiskey Co. now has a home of its own, with every release, the full batch record, and our National Bottle Club.

Every month we release one Definitive Series batch, blended once and never repeated. Members get it first, and whatever is left reaches the bar here until it is gone.
Choose one, two, or three bottles a month. At three, you earn a guaranteed right to buy every Chef and Exceptional release, the two bottles above. We hold bottles back to honor it, so those spots are limited.
